Nelma Light Inox

A smokery «Nelma Light» is designed for hot smoking of fish, poultry, meat, bacon, cheese and other products in the open air.

The new model does not have a built-in wood-burning stove. The smokery is a chamber 25 cm high and 39 cm diagonal in plan. Convenient for transportation, does not take up much space during storage. The smokery can be installed on a burning brazier, a fire, a gas burner or an electric hotplate. 

The chamber lid has the shape of a dome, so the condensate formed on it from the inside does not flow onto the food or the outer surface of the chamber, but goes into the water seal gutter.

The water seal is intended both for collecting condensate and for locking vapors and strong odors in the smoking chamber. The water in the water seal prevents the smoke from escaping. The smoke is concentrated inside the smoking chamber, which makes the dishes more aromatic and tasty. 

A water seal prevents air from entering the smoking chamber, excluding the possibility of ignition of wood chips. The water seal gutter serves as an additional stiffening element, helping to prevent the camber deformation from temperature and mechanical stress.

The grate stand allows to securely fix the grates. There is a comfortable handle on top. Cooked meals can be served directly on this stand. There is a tray for collecting fat and juice in its lower part.

The stand set includes two removable handles and food grade stainless steel grates. Using the handles, you can move the smokery from place to place, even while smoking, without getting dirty or scalded. The lid has a wooden handle with a stainless tube inside, wherethrough excess moisture comes out of the smoking chamber, so that the products can dry out better during smoking. Grip the handle carefully, from the side, to avoid scalding from steam.
